Fluffy Chocolate sponge pancake baked Skillet


[Ingredients] ■Ganache (12x18cm 1 serves 2 people) ・Chocoalte(Equatoriale 55%):100g ・Heavy cream 35%:50ml ・Honey:15g ・Unsalted butter:10g

■Sponge Pancake(15cm スキレット1枚分) ・Whole egg: 2pcs(Separate the egg yolk and egg white) ・Granulated sugar:40g ・Milk:30ml ・Cacao Powder:5g ・Bread flour:40g ・Baking powder:2g ・Powdered sugar(use for sprinkling)、Mint、Chocolate syrup etc

 Today we will be making the Chocolate Sponge Pancake that was shown in the “Solitary Gourmet” series. I have changed the butter on top to ganache for a crazier effect. There are other creators that have done a similar recipe, and I will do a chocolate version of it.  Chop the chocolate, and boil the heavy cream and honey.  Once the heavy cream is boiled, combine it with the chocolate and leave it until it melts.  Mix and emulsify, once the temperature has lowered to around 40℃, add the butter and mix until it melts.  First, set the cookie sheet onto the mold (12 x 18cm). Pour it into the mold, level the surface and remove air. Put it into Tupperware and solidify it in the refrigerator.  I cut about 9-10cm square and got 2 pieces. Spread salad oil or edible oil onto a 15cm skillet.  Using two whole eggs, and separate the egg white and egg yolk. Place the egg white into the fridge first to easily make the meringue.  I have blanchir the egg yolk and granulated sugar, But it is okay just to mix it.  Sift the powdered ingredients. Mix quickly. Add the half-frozen egg white with granulated sugar gradually to make the meringue.  I did it manually, But it is better to use an electric hand mixerヽ(´Ï‰`;) I regret mixing it by hand.  Apparently, my arms have been pumped up. I’m exhausted, everyone please use an electric hand mixer okay? Add 1/3 of the meringue first and mix well. After adding the rest, mix so that the bubbles do not collapse. Use a whisk or spatula and scoop it from the bottom. Preheat the oven, and pour the dough into the skillet to bake. Bake for 10mins at first, add in a cross mark cut and bake for 10mins more. Totalling 20mins of baking time.  If you notice that it is not evenly baked, switch the position midway. After 9~10mins baking, make a cut.  It is perfectly baked. If you add some impact, it won’t deflate as easily.  Feel free to decorate as you like~ Complete! Usually, it looks like this when you put butter on top. Let’s give it a try♪ It is nicely puffed with a nice fragrance.  The ganache looks very thick and delicious! The sponge cake is so soft and fluffy, Even if there’s ganache it is lighter than I thought. The sponge cake was firmly inflated.  It seems that bread flour will swell more than cake flour. This is delicious.This is great for party occasions.  By adjusting the ingredients, I want to make it a gift if it could be made into a rectangular shaped sponge cake.  I really want to taste the actual cake from Comma Coffee that was introduced in the “Solitary Gourmet” series. It was yummy. The portion was a bit too much. May the force of cocoa be with you (*´∀`)ノ This time I want to talk about a social phenomenon, Halloween in Shibuya. Despite the weekdays, it was terribly crowded.This is completely different from the original Halloween where we give out candies to kids in costumes.  There were a lot of press and curious people like us. The garbage was more than usual, but there are nice people that help clean up and it has improved from the previous year. It may be all Japanese culture. It seems that changing clothes at the shop is very noticeable and is a nuisance. Next Morning Nov 1st, 6:00 AM It calmed down in the morning, and there are many people there to clean up the garbage.  Thanks to all the people who cleaned up during the night, There weren’t a lot of garbage in the morning for us to clean.  Thank you to those who picked up the trash.The garbage was nicely gathered, and the streets are surprisingly very clean. Halloween is where you cook or make sweets, and I would like to spend it without inconvenience if possible.

Greek Christmas Honey Cookies - Melomakarona

When I first tried Melomakarona was the first Christmas that I had in Greece. They are Christmas desserts that are very popular in Greece. I'm not a big fan of honey but they taste delicious and honey makes them better. Ingredients for Melomakarona 150 g fine semolina 550 g flour 1/2 tbsp baking powder 100 g orange juice 100 g sugar 1 tbsp cognac 1 tbsp powered cinnamon 1/3 Tsp nutmeg 1/3 clove 1/2 baking soda 1 vanilla extract 90 g water 125g olive oil 125 g vegetables oil 50 honey Zest of an orange Ingredients for syrup 600 sugar 300 g water 2 cinnamon stick 3 cloves 1 orange 180 g honey Ingredients to garnish 200 g chopped walnuts Step 1 We have to make the syrup first.
